Brownies: for the Cavegirl who needs chocolate!


I have been experimenting in the world of paleo baking and overall it’s been kind of a let down. The recipes I have tried have been incredibly disappointing, dry, crumbly, flavorless and weirdly dense. Paleo baking, in my humble opinion is almost not worth the effort (plus the ingredients are really expensive). However, I have accepted these failures as a challenge, to take the recipes that are out there and make them more than edible but CRAVEWORTHY! I am proud to say that these brownies are my first success: they are soft, fudgey and best of all, they taste delicious! In comparison to the paleo brownies recipes I have found out there, this is a good amalgamation of concepts, and I am learning slowly what works, how to use coconut and almond flours and what will bind and give lift to my treats! This is not a low calorie brownie, but it is for all intents and purposes 100% paleo…unless you add the chocolate chips and use cow’s milk…but really no one is perfect!


1/3 cup of butter

1/2 cup of cocoa powder

1/2 cup of Coconut Flour

1/3 cup honey

1 tablespoon Vanilla

2 T almond butter

1/4 cup milk (choice of coconut, almond or cow!)

1 egg

*1/4 cup chocolate chips (or cocoa nibs if you are strict)

*1/4 cup nuts of choice

*1/4 cup dried cherries

**these are optional. I like stuff in my brownies, so I threw in everything from my pantry 🙂

Topping: 1/3 cup coconut milk

1. Mix together butter & cocoa powder.

2. Add coconut flour, mix well.

3. Add honey, vanilla, milk and egg. Mix in almond butter.

4. Fold in chocolate chips, nuts & cherries.

5. Bake at 350 for 25-30 minutes, in an 8X8 pan lined with foil (trust me…they’ll stick if you don’t)

6. The next part is the most important. Cool the brownies, take a fork and stab a them a few times, then pour a 1/3 cup coconut milk on top (this is the method to keep them moist) – then cover and refrigerate for an hour or two…it’s worth it, I promise!

7. When they are completely cool, cut and serve with a glass of milk. Enjoy!!
